June 2024 - Fun in the Sun

Summer is almost officially here, and while we love soaking up the sunshine (and getting that Vitamin D!) remember to always use sunscreen when outside to help prevent sunburn and skin cancer. Tick season has arrived, too, so if you’re outside in wooded areas or high grass, be sure to check your body and your kiddos for ticks. (Check out this helpful video from Dr. Rebecca Byard to know what to do if you find a tick on your skin.)

Enjoy the outdoors, and be safe this season of fun in the sun!

Updates from your DCPP Docs

Walk with a Doc: Join the docs from Direct Care Physicians of Pittsburgh who are teaming up with Drayer Physical Therapy on the 2nd and 4th Wednesdays of the month at 9:30 am. This month, we are walking in Highland Park on June 12 and June 26. Meet at the fountain, and let’s have some fun! 

SAVE THE DATE: Mark your calendars for upcoming walks, which are scheduled for July 10 & 24, Aug. 7 & 21 and Sept. 4 & 18.

MOVE 4 MOBILITY 5K: Dr. Natalie Gentile and Dr. Emily Scott will be representing DCPP at the second annual Move 4 Mobility 5K presented by AMD3 and Operation Walk Pittsburgh on Saturday, June 22, in Schenley Park. The course is described as an out-and-back route along Bridle Trail. It begins at 9 a.m., with a separate 1/2-mile race for kids at 8:30 a.m. Learn more and register online.

Recipe of the Month: Grilled Corn Salad

A perfect companion to kick off the grilling season! Enjoy this delicious salad as a side dish or add a plant protein like grilled tofu to make it a complete meal.

For the Grilled Corn Salad:

  • 5 ears of fresh corn husked with silks removed 
    • Time-saving hack: You can also buy a 16 oz. bag of frozen corn and thaw before using.
  • 1 1/2 tablespoons extra-virgin olive oil
  • 2 teaspoons kosher salt
  • 3/4 teaspoon black pepper
  • 1 pint halved cherry tomatoes (2 cups)
  • 2 cups packed arugula or baby spinach
  • 1 medium avocado peeled, pitted and diced
  • 1 small red bell pepper cored and finely chopped
  • 4 green onions finely chopped
  • 1/4 cup chopped fresh cilantro (optional)
  • ½ cup chopped red onion (optional)
  • 1 can black olives (optional)

For the Dressing:

Directions:

  • If using fresh corn: Preheat the grill to medium (about 400 degrees F). Rub the corn with olive oil and sprinkle it with salt and pepper. Grill the corn for 7 minutes, turning every few minutes until ears are lightly browned. Remove from the grill and let cool. Carefully cut the kernels from the cob and transfer them to a large mixing bowl. 
  • If using frozen corn: Thaw corn by running it in a colander under hot water for a few minutes. Add a tablespoon of olive oil to a pan and add corn once oil is sizzling. Toss in salt and pepper.
  • In a large bowl, add the cherry tomatoes, arugula, avocado, bell pepper, green onions, red onion, olives and cilantro.
  • In a small bowl, stir together the dressing ingredients. Pour over the salad and toss to combine. Serve at room temperature.
